- ½ cup sweetcorn (canned or thawed)
- ½ small red onion, finely chopped
- 3.5 oz (100 g) cream cheese
- 2 tbsp barbecue sauce (or favorite sauce)
- 4.5 oz (125 g) grated mozzarella cheese
- 4 large flour tortillas
- Salt and pepper, to taste
- 1 tbsp sunflower oil (optional, for frying)
Instructions
- Mix shredded chicken, sweetcorn, red onion, cream cheese, barbecue sauce, and mozzarella in a large bowl. Season with salt and pepper; stir until creamy and combined.
- Lay tortillas flat. Spoon filling onto center, fold sides, then roll tightly into wraps.
- Choose cooking method:
- Pan-fry: Heat oil over medium heat; cook wraps seam-side down 2–3 minutes per side until golden and crisp.
- Bake: Preheat oven to 375°F (190°C). Bake wraps on lined tray 10–12 minutes, flipping halfway.
- Let cool slightly. Slice diagonally and serve warm with extra barbecue sauce or yogurt dip.
Notes
Use leftover rotisserie chicken for convenience.
Mix in cheddar for extra cheesy melt.
Drain corn well to avoid soggy wraps.
Cook seam-side down first to seal wraps properly.
Make filling up to 24 hours ahead for quick assembly.
