Ingredients
Chicken & Sauce
4 boneless, skinless chicken breasts, pounded evenly
Salt and pepper, to taste
2 tbsp olive oil
1 tbsp unsalted butter
8 oz mushrooms, sliced
2 cloves garlic, minced
1 tsp dried thyme
1/2 tsp dried oregano
1 cup chicken broth
1 cup heavy cream
Buttered Noodles
8 oz noodles of choice (egg noodles or fettuccine)
2 tbsp butter
Toppings
Fresh parsley, chopped
Grated Parmesan cheese
Instructions
Cook chicken: Season chicken with salt and pepper. Heat olive oil in skillet over medium-high heat. Sear chicken 4-5 minutes per side until golden and cooked through.
Sauté mushrooms: Add butter to same skillet. Sauté mushrooms 5 minutes until golden and softened.
Build sauce: Stir in garlic, thyme, oregano; cook 1-2 minutes until fragrant. Add chicken broth, scraping brown bits. Simmer 4-5 minutes.
Add cream: Stir in heavy cream and simmer 3-4 minutes until sauce thickens. Season with salt and pepper.
Cook noodles: Boil noodles per package till al dente. Drain, toss with butter.
Combine: Slice chicken, return to skillet with sauce. Heat briefly, then serve over noodles.
Garnish: Sprinkle with parsley and Parmesan before serving.
