  • 12 oz cream cheese, 0.5 cup sugar, 2 tbsp flour
  • 0.5 cup sour cream, 1 egg, 1.5 tsp vanilla

Whipped Frosting

  • 8 oz cream cheese, 1/4 cup butter, 1 cup cold heavy cream
  • 0.5 cup powdered sugar, 1.25 tsp vanilla, salt

Instructions

Prep: Steam and puree half the carrots; grate the rest. Whisk dry ingredients.

Cake: Cream butter, oil, and sugars. Add eggs and vanilla. Alternate dry ingredients and carrot puree. Fold in shreds.

Cheesecake: Beat cream cheese, sugar, and flour on low. Stir in sour cream, vanilla, and egg.

Layer: Alternate 3 layers of cake and 2 layers of cheesecake in a 9-inch springform. Swirl with a knife.

Bake & Cool: Bake at 350°F for 60 mins. Turn off oven; let sit inside for 30 mins with door cracked. Chill 6 hours.

Frost: Whip cream to stiff peaks. Cream remaining ingredients. Fold whipped cream into cheese mixture and frost.
