Description
Soft, buttery rolls filled with melty mozzarella and aromatic roasted garlic butter golden on the outside, fluffy inside, and bursting with cozy, savory flavor.
Ingredients
Garlic Butter
1 whole head of garlic
Sprinkle of salt
3 tbsp olive oil
50 g (1/4 cup) butter
1 tbsp chopped fresh parsley
Dough
90 g (1/3 cup) warm milk
7 g (2 1/4 tsp) active dry yeast
1 tbsp honey
200 g (1 1/2 cups) all-purpose flour
50 g (1/2 cup) bread flour
20 g (3 tbsp) milk powder (optional)
25 g (2 tbsp) butter
2 egg yolks
1 1/2 tsp salt
1 tbsp sugar
Filling
200 g (2 cups) shredded mozzarella
Prepared garlic butter
Egg Wash
1 egg, beaten
Instructions
Roast garlic: Cut off top of garlic, drizzle with olive oil, salt, cover, and roast at 160°C (320°F) for 2 hours until very soft.
Make garlic butter: Mash roasted garlic, mix with butter, parsley, 2 tbsp garlic oil.
Activate yeast: Combine warm milk, yeast, honey—let sit 10 mins till foamy.
Prepare dough: Mix all flours, sugar, milk powder, butter, salt, egg yolks, and yeast mixture. Knead 15–20 mins to soft dough.
First proof: Place in greased bowl and rise 1.5 hours until doubled.
Fill & roll: Roll dough 1/4 cm (1/8 in) thick. Spread garlic butter and mozzarella evenly, roll tightly into a log.
Cut & second proof: Slice into 6 rolls, proof 30 mins.
Bake: Brush with egg, bake at 175°C (350°F) for 20–25 mins.
Finish: Brush hot rolls with garlic butter and more parsley. Serve warm.

Proof in a warm, draft-free place.
Use quality mozzarella for max stretch.
Don’t skip the roasted garlic step.
Slice logs with floss for tidy spirals.
