Cheddar Bay Philly Cheese Steak Cobbler

  • Author: Samantha Brooks
  • Total Time: 70 minutes
  • Yield: 8 Servings 1x

Description

A revolutionary comfort food mashup combining savory Philly cheese steak flavors with a buttery Cheddar Bay biscuit crust. Featuring tender roast beef, sautéed peppers, and a rich cheddar sauce, this ‘cobbler’ offers restaurant-quality flavor in an easy family-style bake.

Ingredients

Scale

The Savory Beef Base

  • 18 oz deli roast beef, chopped
  • 1 green & 1 red bell pepper, 1 red onion (diced)
  • 2 (10.5-oz) cans cheddar cheese soup, 1/2 cup milk
  • 1.5 cups shredded cheddar, 1 tbsp garlic, 0.5 tbsp steak spice

The Cheddar Bay Topping

  • 1 box Cheddar Bay biscuit mix (reserve seasoning)
  • 1 cup shredded cheddar, 2 cups milk
  • 1/4 cup melted butter

Instructions

Sauté: Cook roast beef for 2–3 mins. Add peppers and onion; sauté until soft. Stir in garlic and steak spice for 3 mins.

Sauce: Mix in cheddar soup, 0.5 cup milk, and 1.5 cups cheese until smooth. Transfer to a 9×13 dish.

Topping: Whisk biscuit mix, 1 cup cheese, and 2 cups milk until smooth. Pour over beef mixture.

Bake: Bake at 350°F for 50–55 mins until crust is golden and set.

Finish: Mix melted butter and seasoning packet; brush over hot crust. Rest for 5 mins.

Notes

The ‘Butter Soak’ Secret: Resting for 5 mins after brushing allows the garlic-herb flavors to penetrate the crust.

Soup Stability: Canned cheddar soup acts as a stable emulsifier that won’t ‘break’ or become oily during the long bake.

Watch the Center: If the top browns too quickly, tent with foil to ensure the ‘wet’ biscuit center cooks through.
