Ingredients
For the Peach Filling
- 4 ripe peaches (pitted and sliced 1/4-inch)

- 3/4 cup unsalted butter (room temp)
- 1/2 cup packed light brown sugar, 2 tsp vanilla
- 1 2/3 cups all-purpose flour, 1/2 tsp salt, 1/2 tsp baking powder
Instructions
Jam: Combine 2/3 of peaches with 1/3 cup sugar, flour, and cinnamon in a saucepan. Cook 10 mins until thick and jammy. Stir in remaining 1/3 fresh peach slices; set aside.
Dough: Cream butter, 1/2 cup sugar, and vanilla for 3 mins. Add dry ingredients; mix until thick and cohesive.
Layer: Press 2/3 of dough into a lined 8×8 pan. Spread peach filling to the edges. Crumble remaining dough on top.
Bake: Bake at 350°F for 35–40 mins until bubbling and golden brown. Cool completely before slicing.
Notes
Patience is Key: For clean squares, the filling must be completely set. Chill in the fridge for 30 minutes after reaching room temperature.
