Blackberry Jalapeño Stuffed Chicken with White Wine Pan Sauce

The Chicken & Rub

  • 4 large boneless, skinless chicken breasts
  • 2 tsp oregano, 1 tsp garlic powder
  • Sea salt and black pepper, to taste

The Gourmet Stuffing

  • 1 cup fresh blackberries, slightly smashed
  • 4 small jalapeño peppers, sliced (seeds removed)
  • 4 thick slices mozzarella or provolone cheese

Searing & Pan Sauce

  • 2 tbsp avocado oil or butter
  • 1/2 cup dry white wine or chicken broth
  • Garnish: Fresh parsley or basil

Instructions

Prep: Preheat oven to 375°F. Rub chicken with oregano, garlic powder, salt, and pepper.

Stuff: Slice a pocket into the side of each breast. Layer the cheese first, then jalapeños and berries. Secure with toothpicks.

Sear: Heat oil in an oven-safe skillet. Sear chicken for 4 mins per side until golden.

Deglaze: Pour wine or broth into the skillet, scraping up browned bits.

Bake: Transfer skillet to oven; bake for 12–15 mins until internal temp is 165°F.

Finish: Rest for 5 mins, remove toothpicks, and garnish with fresh herbs.

Notes

The ‘Slight’ Smash: Only crack the skins of the berries; pulverized berries release too much juice, causing the chicken to steam rather than sear.

Cheese as a Barrier: Placing the cheese in the pocket first acts as ‘glue’ to keep the fruit and peppers contained.

Heat Control: Meticulously remove seeds and white membranes from jalapeños for a milder flavor.
