Description

The ultimate comfort food, perfectly balancing sweet, smoky, and tangy flavors. Tender, slow-cooked shredded chicken smothered in BBQ sauce is piled into roasted sweet potatoes and topped with a crisp celery seed coleslaw for a complete, satisfying meal.

Ingredients

Scale

The Roasted Base

  • 4 medium to large sweet potatoes
  • Garnish: Chopped green onions

The Slow-Cooker BBQ Chicken

  • 1 lb boneless chicken breast
  • 10 oz BBQ sauce, 1/4 cup apple juice
  • 1 tbsp apple cider vinegar, salt/pepper

The Celery Seed Coleslaw

  • 4 cups shredded coleslaw mix
  • 1/2 cup mayo, 2 tbsp apple cider vinegar
  • 1 tsp celery seed, 0.5 tsp Dijon, 1 tsp salt, 0.25 tsp pepper

Instructions

Slow Cook: Cook chicken, sauce, juice, and vinegar in a crockpot on High for 2–3 hours. Shred and toss back in sauce.

Roast: Bake pricked potatoes at 425°F for 45–50 mins until tender.

Slaw: Whisk dressing ingredients and toss with coleslaw mix.

Assemble: Split potatoes, fluff the inside with a fork, and pile with 4 oz of chicken.

Serve: Top with coleslaw and green onions. Serve immediately.

Notes

The ‘Fluff’ Factor: Fluffing the potato creates peaks and valleys that allow the BBQ sauce to soak in, preventing a dry base.

Apple Juice Secret: Provides natural sweetness and acts as a tenderizer for chicken breast.

Crunch Control: Toss cabbage with dressing at the last second for maximum crunch; wait 30 mins for deli-style softness.
