Ingredients
2 large sweet potatoes
3 large eggs, beaten

1 tsp dried oregano
1 tsp paprika
1/4 tsp cayenne pepper
Instructions
Preheat oven: Set to 450°F (230°C). Line a large baking sheet with parchment or foil for easy cleanup.
Prep potatoes: Scrub and cut sweet potatoes into evenly sized wedges; keep the skin on for extra flavor.
